Papa Legba Steak

Here’s what you’ll need:

  • 2 tsps Kosher salt
  • 2 tsps seasoned pepper
  • 2 tbsps Papa Legba Love Rub
  • 1/4 cup of olive oil

Start with a nice cut of meat such as filet mignon or rib-eye. Sprinkle salt, pepper, and Love Rub on one side. Pat it down, and flip to other side and repeat.

If possible, use a cast iron skillet to cook your streak. Because you are trying to get a good sear on the meat, you may want to cook your steak on a BBQ grill if you have one. This helps in two ways: 1) The skillet can get much hotter and therefor give a better sear to the meat. 2) It keeps you from smoking out your kitchen and possibly setting off your smoke alarm!

Heat the skillet up to a high heat. Add olive oil. Once it starts to smoke, place the steak in the skillet and close the lid on the BBQ. Let the steak cook for about 5-6 minutes and use tongs to rotate the steak a quarter turn. This helps create a nice sear. Flip the steak and sear the other side the same way. Use a meat thermometer to check the internal temperature. You want it to be about 130 degrees. Remove the steak, and LET IT REST FOR 20 MINUTES! The steak will still cook internally. Letting it rest allows the juices to draw back into the meat. Slice and serve with a nice Hill Family red wine!
